Happy Marvelous Meatless Monday! I feel like maybe I should make that even more of a tongue twister to say….how about, Morning my marvelous meatless monday mates! I hope you all enjoyed your weekend, I had some time to do some errands I have been putting off, includingย updating my blog, which I have been wanting to do for a while. I have already mentioned, that I love winter salads, and this one was no exception. This reminded me of the kind of specialty salad you would see at a restaurant that sounds delicious, but you can’t quite pull yourself away from the other delicious sounding meals. If they have speciality salads, chances are, they have some damn delicious sounding entrees!
Therefore I thought it would be fun to make at home. Full of nutrition, full of flavor, and full of color; eat the rainbow right? Hope you enjoy!
Crunchy Cashew Salad with Honey Ginger Dressing
Serves 4 as a side dish
Preparation time: 10 minutes
Ingredients
Crunchy Salad
1 cup red cabbage, sliced thin
1 large carrot, sliced using a julienne peeler
1/2 medium apple, diced
1 cup spinach
1/2 cup broccoli florets, cut into small pieces
1/4 cup cashews
1/8 cup sunflower seeds or pumpkin seeds
Honey Ginger Dressing
1/4 cup olive oil
1 1/2 tsp ginger
1/4 cup soy sauce
1/4 cup rice vinegar
2 tbsp honey
1/2 tsp garlic powder
1/8 cup water
Instructions
Whisk together the dressing ingredients. Heat in microwave for 30 seconds. Whisk well.
Pour dressing onto salad, mix well.

230 calories, 19g fat, 560mg sodium, 12g carbohydrates, 3g fiber, 2g sugar 1mg cholesterol, 4g protein

So many of my favorite things all inn one place! I adore cashews–probably my favorite nut. I actually usually get salads when I go out–I like to create my own bites, as it were, and between Alex and myself, we usually have the angel/devil spectrum covered ๐

Yum! Had a salad like this over the weekend while staying at my parents but maybe a little more asian as it was sesame oil in the dressing and added black sesame seeds. I bet this tastes amazing with the apples and non asian twist (sorry imagining it in my head as I stare at it! ๐ )! I love ginger and everything about this! I will have to work this one next week.
I typically always get a salad because I’m boring… but honestly I just love salads haha. So it’s really not hard for me to get my veggies ๐
This sounds delicious. Perfect side for dinner or perfect lunch! I sometimes will get a salad when out to eat, but you are right, if a place has awesome salads then they probably have equally awesome other food.
Yess, I love to eat the rainbow! This salad looks scrumptious and extra crunchy from the apples, broccoli and nuts. I am still eating salads this winter, though I feel like I want them less than when it’s warmer outside. I’ve been doing a lot more of sautรฉed greens with lunch or dinner to still get them in, but just in a different manner.

Love how there is so much CRUNCH in this salad! This winter I cannot get enough of brussel sprouts…I love to have them with dinner as my side. I also like to make a lot of meals in the slow cooker, so that is another sneaky way to get in my veggies. AND adding to kale to smoothies…BAM!

Yesterday it wouldn’t let me upload either, but today it did! I had the same problem with another linky party, so I have contacted WordPress customer support and hope to learn how images can be “set to public”. I never had this problem before.
I love a good salad for lunch and cashews are my new favorite nut. You can guarantee I’ll be trying this one, it looks delicious!
