Happy Marvelous Meatless Monday! I feel like maybe I should make that even more of a tongue twister to say….how about, Morning my marvelous meatless monday mates! I hope you all enjoyed your weekend, I had some time to do some errands I have been putting off, including updating my blog, which I have been wanting to do for a while. Check out the pages, I am pretty happy with how they look now 🙂
Today is yet another Meatless Monday, and I am very excited to see what you all bring to share, we are getting a good turnout, with around 20 people a week. Confessions of a Mother Runner and I hope it continues to grow! Please join us if you have meatless recipes to share 🙂
I have already mentioned, that I love winter salads, and this one was no exception. This reminded me of the kind of specialty salad you would see at a restaurant that sounds delicious, but you can’t quite pull yourself away from the other delicious sounding meals. If they have speciality salads, chances are, they have some damn delicious sounding entrees!
Therefore I thought it would be fun to make at home. Full of nutrition, full of flavor, and full of color; eat the rainbow right? Hope you enjoy!

Do you ever get a salad when you go out to eat? What is your favorite way to get your vegetables in the winter?
That honey ginger dressing sounds amazing! Two of my favorite ingredients. Thanks for hosting!
This looks amazing!! Great pictures:)
So many of my favorite things all inn one place! I adore cashews–probably my favorite nut. I actually usually get salads when I go out–I like to create my own bites, as it were, and between Alex and myself, we usually have the angel/devil spectrum covered 😀
We both had salads on our minds. I love the sound of yours. Going to save it so I try it!
That salad dressing sounds so yummy! I’m always looking for good homemade recipes!
Yum! I love salads with apples and cashews pinning!
Oh, yum, yum, yum! This sounds fantastic! I love cashews and I love Asian style dressings. I’m on it!
you just paired all my favorites into one dish. THANK YOU! cashew and ginger for the win! Pinning
I love apples in salads and that dressing sounds so good! Thanks for sharing 🙂
It looks delicious-love cashews! The whole flavor combo sounds wonderful.
This salad looks and sounds awesome!!! Lately I’ve been on a huge salad kick so I will have to give this one a try.
This looks so good- pinning to try soon!!
Sounds absolutely delicious! The combo of ingredients with the dressing is perfect.
Yum! Had a salad like this over the weekend while staying at my parents but maybe a little more asian as it was sesame oil in the dressing and added black sesame seeds. I bet this tastes amazing with the apples and non asian twist (sorry imagining it in my head as I stare at it! 😉 )! I love ginger and everything about this! I will have to work this one next week.
I typically always get a salad because I’m boring… but honestly I just love salads haha. So it’s really not hard for me to get my veggies 😉
This sounds delicious. Perfect side for dinner or perfect lunch! I sometimes will get a salad when out to eat, but you are right, if a place has awesome salads then they probably have equally awesome other food.
Yess, I love to eat the rainbow! This salad looks scrumptious and extra crunchy from the apples, broccoli and nuts. I am still eating salads this winter, though I feel like I want them less than when it’s warmer outside. I’ve been doing a lot more of sautéed greens with lunch or dinner to still get them in, but just in a different manner.
Loving this! I love crunchy salads in the winter – they are so fun to build and eat! Can’t wait to try this dressing! Pinning
This looks so tasty and easy to make! I’m going to try it one day for lunch this week.
I love a honey-ginger type dressing! So good.
Love how there is so much CRUNCH in this salad! This winter I cannot get enough of brussel sprouts…I love to have them with dinner as my side. I also like to make a lot of meals in the slow cooker, so that is another sneaky way to get in my veggies. AND adding to kale to smoothies…BAM!
This look delicious-definitely making that dressing this week!
I can’t link! It won’t accept any of my images! 🙁 I’ll try again later. Here is my post:
Weird. I tried it for myself too, but it wouldn’t load, said that you do not have them set to public….any ideas? Try uploading a picture instead? Sorry 🙁 Will check it out!
Yesterday it wouldn’t let me upload either, but today it did! I had the same problem with another linky party, so I have contacted WordPress customer support and hope to learn how images can be “set to public”. I never had this problem before.
I love a good salad for lunch and cashews are my new favorite nut. You can guarantee I’ll be trying this one, it looks delicious!
Ooh, that sounds good. And I would never say that meatfree isn’t delicious. I know better 🙂
Another winter salad I need to try! Thanks!
