Smoked Salmon Summer Salad with Lemon Dill Dressing

I try to introduce new healthy meals to my family in the hope that they will make them again. After three days of eating out, I decided that a salad was a good bet, and I adapted this Salmon Vegetable Salad with Miso Dressing recipe to suit my family’s preferences and make it more accessible (I have never heard of  some of the ingredients!).

I am not a big fan of using tinned foods when fresh is available so I decided to use smoked salmon instead. My family loves smoked salmon, and it went well with the lemon dill dressing to make a wonderful summer salad.

First, I chopped up all the salad ingredients and the salmon into bit size chunks. I added red cabbage for crunch and color.

Look at those pretty colors!

I threw all of those healthy goodies into a large bowl with some lovely ripe cherry tomatoes, stirred in the lemon dill dressing until it was evenly coated, and there you have it! Simple, healthy, fast!

Smoked Salmon Summer Salad with Lemon Dill Dressing

Serves 4

Ingredients

3 heads of romaine lettuce, chopped
1/2 small red cabbage, chopped
4 small green onions, chopped
3 carrots, grated
1/2 cucumber, diced

8-10 cherry tomatoes, cut in half
9oz(250g) smoked salmon, cut into bite size piecesFor the dressing
1/4 cup(65g) mayonnaise
1/3 Cup (80g) milk
1 Tablespoon greek yogurt
1 Tablespoon lemon juice
1 Teaspoon sugar
1 Tablespoon chopped fresh dill
Salt & pepper to taste

Instructions

Mix all of the salad ingredients into a bowl
Combine the dressing ingredients in a small bowl and stir until smooth. Add more dill to taste preferences if necessary. Stir into the salad until evenly distributed.

My family demolished the entire bowl, hopefully your loved ones will enjoy it too!
