November 3rd. How is it November already?! That means Christmas is just over a month away! Time is flying by waaayyy too quick. This week flew by even faster than usual as I had such a great time with my parents. Being so far away from them really makes me cherish the time I do get with them, and we had a great time exploring central Kentucky; Bourbon tours, outlet shopping, lots of great meals, and of course wedding dress shopping! I said yes to my dress!
I went to Davids Bridal on Wednesday, but was not certain about any of them. I got the feeling that it was like a conveyor belt, just getting me in and out. It was overwhelming with all the options too. Mum and I went to Twirl Boutique on Friday. As soon as I looked in the mirror in that dress, I knew that was it! We tried on others, but I knew this was the one. It was a wonderful moment, and it was amazing having my mum there with me. Cant wait to wear it for real on August 7th 2015! This sweet potato biscuit recipe was given to me by a local farmer at the Winchester Farmers Market. I adapted it to make it healthy, and now I would like to share it with you! I have made these twice in the last few weeks, and I will be making them again for thanksgiving. They are a lighter option for a side, and stay within the fall theme! Enjoy! Sweet Potato Biscuits
Makes 8 biscuits
Preparation time: 20 minutes
Cooking time: 12 minutes
1 cup whole wheat flour
1/3 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1 cup mashed sweet potato
1 tbsp honey
3 tbsp butter, melted
1/4 tsp vanilla
1-2 tbsp milk
Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
Stir the dry ingredients together in an electric mixer over a low speed.
Peel a large sweet potato, and cut into 1 inch chunks. Place in a saucepan, and fill with water to 1/4 inch higher than the potatoes. Boil for 15 minutes until tender, drain, and mash. Stir in the milk. Measure out into 1 cup (if you add too much, they will be too doughy).
Add the sweet potato, honey, butter, and vanilla into the dry mixture. Once combined, turn up to a medium-high speed to knead the dough.
Roll out the rough on a lightly floured surface. Cut out circles in the dough, and place onto baking sheet.
Bake for 12-14 minutes, until the biscuits are golden brown around the edges.
