Meatless Monday- Healthy Mexican Pizza

You know every now and again you get a craving that just nags at your mind until you satisfy it…..I say every now and again, but sweets do that to me every single day….even if I just had something sweet….anyway, I was meaning more from the meals perspective.

For me, recently it had been a good, hearty homemade pizza. Fortunately I had a pizza dough that had been sitting in the freezer for a little while, which made it much easier. I just had to decide on toppings. As I walked past the frozen pizza aisle in Kroger, Red Barron pizza caught my eye, and I remembered that I had once tried a Mexican Pizza…..I could make that into a meatless meal pretty easy.

And that is what I did. I love Mexican style foods, and this was a great way to enjoy lots of vegetables (and of course, fresh mozzarella!) without making the usual bowl-style meal. Healthy Mexican Pizza

Preparation time: 10 minutes

Cooking time: 20 minutes

Ingredients

1/2 batch of modified bobby flay pizza dough; I used the other half of THIS

1 medium tomato, diced

1/4 cup red bell pepper

1/4 cup yellow bell pepper

1/4 cup corn

2 medium mushrooms, sliced

2 tbsp cilantro, cut into small pieces

1/2 cup spinach

1/4 onion, diced

1/2 cup mozzarella

1/2 cup smoked gouda cheese

1/2 tsp cumin

1/2 tsp chili powder

1/4 tsp salt

1/4 tsp pepper

1/2 tsp oregano

Instructions

Preheat oven at 500 degrees F. Have the pizza stone in the oven while it heats up.

Remove the pizza stone, drizzle 1 tsp oil onto the stone. Roll the crust onto the pizza stone to 1/4 inch thick, careful, as it will be warm. Place in the oven for 3-5 minutes. Remove, flip the dough, and cook for another 3-5 minutes until just beginning to brown and crisp.

Place the tomatoes onto a paper towel to drain the excess liquid. Add to the pizza crust, and top with the other ingredients (using the order I have listed them above).

Place in the oven for 10-15 minutes, until the mozzarella starts to bubble and brown, and the gouda is melted.

Serve with avocado on top.
