I have already mentioned, that I love winter salads, and this one was no exception. This reminded me of the kind of specialty salad you would see at a restaurant that sounds delicious, but you can’t quite pull yourself away from the other delicious sounding meals. If they have speciality salads, chances are, they have some damn delicious sounding entrees!
Therefore I thought it would be fun to make at home. Full of nutrition, full of flavor, and full of color; eat the rainbow right? Hope you enjoy!
Crunchy Cashew Salad with Honey Ginger Dressing
Serves 4 as a side dish
Preparation time: 10 minutes
1 cup red cabbage, sliced thin
1 large carrot, sliced using a julienne peeler
1/2 medium apple, diced
1 cup spinach
1/2 cup broccoli florets, cut into small pieces
1/4 cup cashews
1/8 cup sunflower seeds or pumpkin seeds
Honey Ginger Dressing
1/4 cup olive oil
1 1/2 tsp ginger
1/4 cup soy sauce
1/4 cup rice vinegar
2 tbsp honey
1/2 tsp garlic powder
1/8 cup water
Whisk together the dressing ingredients. Heat in microwave for 30 seconds. Whisk well.
Pour dressing onto salad, mix well.
