It’s Monday again! Now I have been working full-time for a little while, I feel like I am allowed to say “Ugh, is it already Monday?!” like everyone else….although, I am very lucky that my boss is flexible with my hours to allow me to go do the therapy, massage, and strengthening work I need to for my training.

That means I am often working quite a few hours during the weekend, but for me it is a worthwhile tradeoff. I am really enjoying working at Runners Connect, and if you have not already checked it out, you really should. Okay, plug over, I promise!

I am very excited that one of my recipes will be featured in Verily magazine next week! My friend Tana (who cooked and photographed my Berry Quinoa Kale Salad recipe) and I worked together to create another recipe for the holidays. What could be more festive than white chocolate and cranberry? Not much in my eyes! This recipe is healthy, yet still delicious!

These cranberry and white chocolate pancakes are a healthy way to make the most of the festive season, without sacrificing flavor! Perfect for a special breakfast!

Cranberry and White Chocolate Pancakes

Serves 3 (makes about 6 pancakes)

Preparation time: 5 minutes

Cooking time: 10 minutes

Ingredients

1 tbsp sugar

1 1/2 cups all purpose flour

½ cup whole wheat flour

1 ½ tsp baking soda

1 ¼ tsp salt

¼ tsp ginger

1/2 cup applesauce

¾ cup Greek yogurt

1 1/2 tbsp butter, softened

1/3 medium mashed banana (about 1/4 cup)

1 1/3 cup milk (I used almond milk)

1 tbsp butter

¼ cup cranberries

¼ cup white chocolate chips

Instructions

Combine the sugar, flours, baking soda, ginger, and salt in a medium bowl.

Stir the applesauce, greek yogurt, butter and milk in a third bowl. Mix until combined.

Fold the wet mixture into the dry mixture, there will be lumps in the batter.

Heat ½ the remaining butter on a pancake griddle over a medium heat. Pour a ladle full of batter onto the griddle. Leave to cook for a few minutes, until bubbles come through the surface, and remain there (initially the bubbles will pop and then be covered over by the batter again. Flip the pancake, and cook the other side for 2-3 minutes, until golden brown.

Serve with maple syrup.

402 calories, 12g fat, 755mg sodium, 70g carbohydrates, 7g fiber, 22g sugar 17mg cholesterol, 10g protein

    These look amazing! I have been loving white chocolate lately.I love the flavor combo of white chocolate and cranberry. Oh and the addition of greek yogurt!

    I’ve never tried white chocolate pancakes! It seems like a great combo with the cranberry – perfect for the season! I need to go on a hunt for lactose-free white chocolate chips! Maybe Whole Foods will have some! Thanks for hosting the link up, as always 🙂

    My family and I LOVE pancakes! I love the fact that these are eggless… Thankfully we don’t have any egg allergies in my house but I have friends who do and this will be a great option for me to share with them.   • These are delicious. I made them without the white chocolate and cranberries and instead subbed coconut. It was delicious like that. Also, I wasn’t sure if you recommended plain greek yogurt or vanilla but I made it with plain and it was still plenty sweet. Thanks for sharing this!
