I have already mentioned, that I love winter salads, and this one was no exception. This reminded me of the kind of specialty salad you would see at a restaurant that sounds delicious, but you can’t quite pull yourself away from the other delicious sounding meals. If they have speciality salads, chances are, they have some damn delicious sounding entrees!

Therefore I thought it would be fun to make at home. Full of nutrition, full of flavor, and full of color; eat the rainbow right? Hope you enjoy!

This Crunchy Cashew Salad with Honey Ginger Dressing is a great nutrient dense meal that elite runner Tina Muir enjoys to fuel her training.
