Meatless Monday- Vegetarian Cranberry and Apple Stuffing

IMG_6702-2 Happy MarvelousMiMM Meatless Monday! This weekend Steve and I were able to run in shorts both days! In Michigan we would be in 2 pairs of pants by now! On Saturday when we ran it was 62! That was truly marvelous!

Can you believe it is already the last week of November? Thanksgiving is this week, and today I get to pick up my friend (and future sister-in-law) from the airport, as she is staying with us for thanksgiving, very excited about that!

Speaking of Thanksgiving, my Meatless Monday recipe for the week is a delicious vegetarian stuffing that you can bring to your thanksgiving meal. I loved the cranberries and apple in there, and it was another way to use the wonderful Lightlife products that I have been trying out recently. I am not a vegetarian, but I do love to enjoy Meatless meals (if it wasnt already obvious :P), and Lightlife are great for making sure your meal is still balanced, and packed with protein, even if you are not eating meat.

This vegetarian cranberry and apple stuffing is perfect for thanksgiving this year!

Cranberry and Apple Stuffing

Serves 4

Preparation time: 5 minutes

Cooking time:20 minutes


1 tbsp oil

2-3 slices whole wheat bread, cut into 1/4 inch chunks (I used my Homemade Whole Wheat)

1/4 onion, diced

1/4 tsp garlic powder

1/2 small apple, diced

1/8 cup cranberries

1 egg, beaten

2  Lightlife Vegetarian Sausages, cut into 1/4 inch circles

2 tsp sage

1 tsp dried parsley

1/4 cup pecans

1 cup vegetable broth

1 tbsp butter


Preheat the oven to 350 degrees F. Grease a loaf pan.

Heat 1/2 tbsp oil over a medium high heat in a sauce pan or sauté pan. Add the bread, and stir continuously until the bread is crispy and golden brown. Move bread into a bowl.

Using the same pan, add the apples, and stir over a high heat until soft and slightly browned/caramelized. Add to the bread in the bowl.

Again, using the same pan, cook the onions in the remaining 1/2 tbsp oil until starting to golden. Stir in the garlic powder, sage, parsley and vegetarian sausages, and cook on a medium high heat for 2-3 minutes until the sides of the sausages are beginning to brown. Turn the heat to low, and cook for another 5 minutes. Pour into the bread mixture. Add the cranberries and pecans

Heat the vegetable broth and butter, until melted. Pour over the bread mixture, and add the beaten egg. Stir well to combine all the ingredients before transferring into the loaf pan.
